New coffee shop coming soon to Thunder Bay

A representative from the company said Columbus Café positions itself as “the coolest coffee shop in the industry.” 

THUNDER BAY -- A new coffee shop will open at the end of the year in Thunder Bay.

Columbus Café & Co., based in France, is scheduled to open later this year in the space formerly occupied by Starbucks at the Indigo store. 

According to a story in Retail Insider, which includes Thunder Bay on its list of upcoming new stores, Columbus Café offers an “authentic Parisian experience.”

A representative from the company told Retail Insider that Columbus Café positions itself as “the coolest coffee shop in the industry.” 

“If you walk into the store, the Columbus Café, you will see a unique design. We have a very special vibe, very young, urban, very cozy and warm as well.

“We have Parisian bistro chairs because the chain was founded in France in 1994. So we bring a little bit of France into the concept.

“And you can feel it in the recipes as well. For example, all of the players in this industry have a breakfast sandwich with eggs and bacon which we also offer, but in our breakfast sandwich there’s also dijon mustard. In every recipe, there’s a French twist to it.”

Through a message on LinkedIn, the company confirmed it will open at the end of the year.

The coffee shop is scheduled to open in 11 Indigo and Chapters locations across Ontario and Quebec.
